Signature Harissa

The Harissa, a seasoning made from red pepper paste, is an integral part of Tunisian society’s daily culinary and food traditions and provisions. It is most often prepared by women in a friendly and festive familial or communal setting.

The peppers are first sun-dried, then split, stemmed, and seeded.

The peppers are then washed, seasoned with salt, garlic, and coriander, and ground in a mortar and pestle or manual meat grinder. The Harissa is stored in glass or earthenware jars for later use.

The cultivation of peppers follows an agricultural calendar that prohibits sowing during certain periods, as it is believed to bring bad luck.

Peppers are hung on looms, and coral replicas are used to ward off evil spirits. The knowledge and skills required for pepper cultivation are transmitted within communities of farmers or through agricultural institutes.

Dar Ya Harissa is produced in Nabeul in a traditional way and it is not just about making a delicious condiment, but it is also a celebration of Tunisian culture and culinary heritage. It is a labor of love that requires skill, patience, and dedication to the craft. And the end result is a fiery, flavorful paste that adds a burst of flavor to any dish it is used in.
